I currently have a Specialized Hardrock Sport 09 that has vbrakes
I would like to upgrade to disc brakes but would also need new wheels as my hubs wont accept rotors.
What do people recommend as I dont have a huge budget
EDIT _ bidding on some 2nd hand Avid Juicy 3's following a recommendation from a friend
So any advice on wheel sets?

Have you thought of getting a custom built set from Merlin, I've just had a quick look and you can get Deore 6 bolt hubs & Mavic XM317 disc specific rims for £99. Just within your budget & no messing around with adaptors.

Plus one for the above vote, slightly heavier than the more 'top end' shimano offerings, but a good, solid hub on half decent rims, as your not too worried about weight (it's not a race-light hardtail) I would go for them.
Alternatively, you could always go for a set of mavic Crossrides, slightly over budget (about £20-25 more) but a good wheelset, although spokes on mavics are a biatch to replace.....
I would go for the Deore personally
