Anyone know if/where I can buy some Nobby Nics with coloured shoulders?

I'm after 26 x 2.10 versions

I think the coloured ones are 2.25 only, you can get them from Merlin.

How do the Nics work as "ghetto" tubeless?

We still do it because we're forever chasing what we've already found

It has been suggested they may have susceptible sidewalls

I have ghettoed Snakeskin nicks without issue. The sidewalls on the snakeskin versions are considerably tougher than the evolution casing but I am fairly confident that normal nics will ghetto OK.

That said, I've never worn through an evolution casing although I accept that many have. I think it comes down to whether or not you ride in conditions where you end up with mud filling the void between stay and tyre. Then the muddy grit can wear the sidewall through.
