Do I really need to use valve caps on my inner tubes, fork and shock?

Q: Valve caps are always a right faff to screw and unscrew when my hands are cold and they’re all dirty, so do I really need to use them on my inner tubes, fork and shock?

A: You’ve already answered this in your question when you tell us your valve caps are always wet and dirty. If the caps weren’t fitted, that same wet and dirt would be working its way into your delicate valve internals, causing all sorts of problems. So yes, always check the valves are clean and replace your caps immediately every time you have to take them off.
